I love stir-fry, but I’m typically hungry 45 minutes after eating it. Why not add beans for extra protein and staying power?
On Sunday, we stopped by the grocery store after brunch. Apparently every other person in the city had the same idea – it was a madhouse. My “meal-plan”(if you can even call it that) went out the window and I just started throwing random stuff into the cart.
So that’s how this dish was born.
Zucchini, white button mushrooms, tofu, white beans, garlic, soy sauce, and some leftover miso-ginger vinaigrette I had in the fridge.
This is a neat way to rinse and drain beans by the way.
I’m serving this with brown rice, but quinoa would be even better for even more protein!
