Beyonce + Jay-Z Concert

I forgot I haven’t posted about this yet! This time last week, I was at Soldier Field in Chicago at the Beyonce and Jay-Z concert.

We were in the balcony around the 50 yard line. They would have been great seats for a Bears game, but as you can see, the stage was pretty still far.

It was a great performance for both Bey and Jay. I get why people are speculating that they’re breaking up after the tour though.  For example, Beyonce would sing about infidelity, and then sing about forgiveness. Jay-Z would reach out to her on stage, and then she’d shrug him off. But this is a heavily produced show – I’m sure it’s just part of the act.

We also went to BYOB sushi at Kai in the South Loop.

The only not fun part was getting out of Soldier Field – it took 2 hours! Worth it.

Another Day, Another Chicken Recipe

Some nights, I just need a simple, quick, and hearty meal.

This was one of those put the stuff on the things and put the thing in the oven for a time and see what comes out kinda recipes. I marinated chicken breasts in honey balsamic dressing, sprinkled steak seasoning on them, and then threw ’em in the oven for 20 minutes at 375F. While those were cooking, I made mashed potatoes out of a box (that’s how I do it – Chris helped me fancy them up by stirring in minced garlic and garlic powder), and steamed some frozen broccoli. Eas’ to the peas’.

Served with some home-brewed beer – This hit the spot.

Anyone else follow the 1 protein + 2 sides formula for dinner? I’m a big fan, but I wish there were more ways to eat chicken as I get bored easily.

Breakfast Quesadilla

Hi Friends!

Just wanted to share my new favorite breakfast with you!

Breakfast Quesadillas (4 wedges)

  • 2 tortillas
  • 1 egg
  • 2-3 slices cheese (I used a roasted garlic cheddar cheese)
  • 2-3 slices deli meat (I used roasted turkey breast)
  • avocado

First, beat an egg, and pour it into a lightly sprayed nonstick pan.

In another pan, add one tortilla and cheese. Let the cheese melt away!

Add turkey and pieces of avocado. I scooped flat pieces out with a spoon.

Add the egg “crepe” and top with another tortilla. Make sure to flip the quesadilla so the other side gets crispy.

I served mine with a drizzle of Sriracha.

Dinner Party + Game Night

Hi Everyone! How was your weekend? I had a nice little staycation today, since I had a summer day to use up. I basically just ran errands and did laundry, but it was nice to sleep in!

My weekend started on Friday, when my company loaded us up on school buses to go to a nature museum for a camp-themed party…with an open bar. We were specifically asked not to post any pictures from the event on social media.

On Saturday, Tina and I had the following convo on Gchat.

Tina: what are you guys up to today?
Tia: no plans
Tina: if you want to hang out, chris has a new board game and we can play CJ’s game
Tia: do you guys want to come here?
Tina: sure
Tia: do you want to get dinner first? or dinner down here? or i could make dinner
Tina: ooh, making dinner sounds fun
So dinner and game night it was! I threatened to make my amazing quinoa dish, since Chris claims to hate quinoa, but I settled for a version of my 10 Minute Tilapia & Spinach with Yukon Gold Potato Fries with black pepper, garlic, and truffle oil.

 Tina brought 2 bottles of wine (and brownies!)…and posed for pictures while I labored away at our meal. Just kidding.

 After our tummies were full, we broke out the board games.
CJ and Chris always get super competitive, so Tina and I jokingly claim that we don’t like playing with them.
First up, Munchkin, a humorous game that involves fighting monsters.

And then, Pandemic, a cooperative board game where all players band together to prevent four diseases from wiping out the world.

Tina made faces while the boys were bogged down with figuring out game rules/details.
A successful night! Sometimes the best nights are the impromptu ones!

Lunch Fun

I try to pack my lunch during the work week as much as possible, but usually end up buying at least once. As soon as I realized I forgot to pack today, I set my heart on Saigon Sisters at the French Market (conveniently located across the street from my office!). Although they are known for their Vietnamese Banh mi sandwiches – which I have tried and they are awesome – I couldn’t get these noodles out of my head:

They are so simple, yet flavorful – I tried them vegetarian a few weeks ago, another time with pork belly, and today with carmelized chicken. Each variation has been excellent and the portions are great! Pro tip: If you don’t have these with meat, you get the same amount of food, but half the price! Even with meat, it’s only about $8.

Anyway, just thought I’d share a bit about my work day. When I wasn’t eating today, I was getting all up in some Excel spreadsheets, but that’s a post for another time 🙂

This is from the Juniors section, but the size seems to run a bit big. It’s so soft and comfortable. I can’t wait to lounge around in this.

The North Face Liana Insulated Jacket in Black

This is completely sold out already, and I could only find the navy blue picture. This coat is incredibly light…seriously, its weight is comparable to that of a shirt. I’m hoping this will make the next Chicago winter slightly more bearable.

I also got a bunch of picture frames. workout capris/leggings, sports bras, and other less exciting pieces.

Most of my items have been shipping separately, so I’ll share more as they arrive.

Tomato and Mushroom Sauce + Upcoming Trip!

Hi Friends!

I just got from a sweaty spin class with Maya. I feel great now, but I definitely wanted to pass out for 1/2 of the class. It doesn’t help that it was in the mid-90s today.

CJ and I have been eating Freshii this week because they’re doing 5 days of $5 meals. (They are typically around $10). Yesterday we had the Pangoa Bowls with brown rice, corn, tomatoes, black beans, and avocado. Today,  I had the Antioxidant Crunch Salad with spinach, blueberries, and chicken (even though I don’t like fruit in salads) and CJ had a Kale and Chicken Bowl.

Anyways, there’s not going to be a whole lotta cookin’ over here this week. I’m also going to the Beyonce & Jay-Z concert at Soldier Field on Thursday, and I have a work outing on Friday.

Over the weekend, I made a yummy tomato and mushroom pasta sauce using only 5 ingredients

  • fresh tomatoes
  • mushrooms
  • garlic
  • olive oil
  • wine

Okaaay, I put in some salt too, so technically 6.

In other news, my first 3 boxes from Nordstrom’s Anniversary Sale arrived today. Poor CJ had to use a luggage cart to collect everything from the mailroom in our building. I’ll be sharing my finds later this week!

ALSO…we’re going to Miami! For CJ’s birthday, we will be taking a trip to Miami, hanging out on the beach, and going to the Patriots vs. Dolphins game. Neither of us have ever been to Miami – any suggestions for restaurants to try, places to see?
