Raspberry Coconut Cake

Yesterday, I was reading Two Peas & Their Pod, and saw this recipe for Raspberry Coconut Cake with Coconut Streusel.

I decided to make it immediately!

CJ put one piece on his plate…paused, and then went for a 2nd piece. Haha.

For the cake:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, at room temperature
1 cup granulated sugar
1 large egg
1/2 cup coconut milk
1/2 teaspoon vanilla extract
1/2 teaspoon coconut extract
3/4 cup sweetened flaked coconut
1 cup raspberries, fresh or frozen

For the Coconut Streusel:
1/4 cup all-purpose flour
1/3 cup brown sugar
1/3 cup sweetened flaked coconut
4 tablespoons cold butter, cut into pieces

Do you bake from scratch or use mixes? I have to admit that I usually turn to a box, and spiffy it up with some extra ingredients.
