Just wanted to share my new favorite breakfast with you!
Breakfast Quesadillas (4 wedges)
- 2 tortillas
- 1 egg
- 2-3 slices cheese (I used a roasted garlic cheddar cheese)
- 2-3 slices deli meat (I used roasted turkey breast)
First, beat an egg, and pour it into a lightly sprayed nonstick pan.
In another pan, add one tortilla and cheese. Let the cheese melt away!
Add turkey and pieces of avocado. I scooped flat pieces out with a spoon.
Add the egg “crepe” and top with another tortilla. Make sure to flip the quesadilla so the other side gets crispy.
I served mine with a drizzle of Sriracha.
